After years of hunting the best I have found in the mass production line is Bark River. Their A2 is outstanding with the convex edge. The 3V is great too. It can easily be sharpened like a good carbon steel and holds an edge like nothing I have used before.

Plus one on the Grohmann line, they have some good stainless blades.

I'm kind of partial to my Small Game Hunter knife and my Woodsman pattern. But I could be biased as a knife maker.

And here is the very first one that I made, which coincidentally was the first knife that I ever made. I had designed my own hunting/skinning knives for years before becoming a knifemaker and this was my favorite pattern of all that I've had other knifemakers create for me. When I jumped into the craft, I knew it had to be my first knife made as it's just one that works so superbly for how I use a knife in the field.
