I have one of the DMT guided sharpeners with Extra Course, Course, and Fine plates. I don't use it much. To my eyes, it seems to place an awfully steep edge, even when I set it as low as I can. It has been a long time since I made precise measurements, but it just seems really steep.
Stropping on sandpaper/ thick leather/ mouse pad seems to take forever.
So after ignoring my India stone for a few years, I decided to give it a try again.
It turns out I really liked it. The course side worked fast. I taped up the blade to prevent scratches, and went completely free handed. Since the flip side of my India stone is useless (I got Tite Bond II glue on it) I started out with the course side of the India, and then went to a fine diamond plate for finishing up the job.
I keep wondering if I could use my 2 X 42 grinder, just as a slack belt for placing that final bevel. I have not been bold enough to try it yet.
How do you place the final bevel on your freshly-created knives?
