Well, I've sharpened a Furi 5" East/West knife that isn't quite that extreme, but it appears it'll sharpen up without issue (I'm still working on it).
I've had the WEPS for a week now and I've found that it really isn't necessary to do the entire blade length in one continous motion. You can do several shorter sections of the blade with each stroke of the stone. This is particularly important toward the tip of the blade or you get very long scratches nearly parallel to the edge instead of short scratches more perpendicular to the edge.
I only have up to the 600 grit stones, the 800/1000 is backordered, and I didn't get strops yet either. You can get hair-popping edges with a very light touch, but finer stones would make it easier I think. Somebody with more experience can chime in if they will.
