fellow pork lovers - what say you re Spanish Jamon?

now that Spanish Jamon is finally available stateside, what do you think about such fine (and Busse-comparable priced) swine offerings?

supposedly Jamon Iberico de Bellota is the creme de la creme of cured ham, and it certainly sounds and looks good. anyone here had it (either in Spain or elsewhere)?

further, anyone else seen the particular Anthony Bourdain special entitled Decoding Ferran Adria where he visits Jamonisimo in Barcelona and Adria's restaurant El Bulli? that particular episode is the most amazing one hour show I've ever seen regarding food, IMO.

Has anyone ever had any of it? I really wonder if the taste/texture makes it $50-$100/pound or if it's just the name.

I notice the timing of your posts there Guyon, 1 hour and 16 minutes from Mmmmmm to pic of chops.....here's the way I see it happening: You saw this post, thought "mmmmmm pork"...so went out, got some pork chops, grilled them up, took a pic, ate, and now you're posting....Am I close?

Not even. I posted that from work.

Came home. Had a martini. Had some delicious spaghetti with homemade meatballs with two glasses of Petite Sirah. Then I posted a drunken PORK CHOPS response.

Ain't no trout in this stream. :p
 
Jamon is the emblematic food of Spain, cured in remote mountain villages for thousands of years.

Is it safe to eat meat if it's that old?!?!

Looks delicious either way!!!!
 
Dey awful damn proud o' dat der' pig meat! What de feed dem pigs ober der? Pygmalion, what de feed pigs in Pinewood? Maybe y'all need some o' dem Spanish pigs, change de economics of the whole county!!

amongst whatever else they normally eat, they're allowed to eat as many acorns as they want - which supposedly contributes heavily to the fat content and taste.

The Spanish take their pig very seriously. Over on the island (PR) we just slaughter 'em, clean 'em, and throw em on the fire. Guess a lot got lost between there and here. :D
 
I've had Jamon Iberico in a hotel restaurant in northern Spain.

It is not to be missed. Deep, satisfying flavor. A wonderful memory. :thumbup:


Which takes nothing away from a nice roasted porker in Puerto Rico. It's just a different experience.
 
I love the Spanish for their Aioli sauce...man that's great stuff. Oh and the topless beaches in Benidorm. Great memories from when I was 7. :D:D

Actually, living in Miami we have a LOT of latin/Spanish ethnic restaurants. One of my favorite spots is a place where they serve "latin soul food". Tapas-style dining with recipes and flavors from all over south and central America, the Caribbean, Spain, etc... Provoleta (which is either Argentine or Italian), Calamari asado and papas aioli. Mmmmmmmmmmmmmmmmm

If any of you is ever coming down to Miami, let me know and I'll try and set you up with some good eating spots. Maybe we can share a little scotch and talk knives. :D

Man, South Florida has the best latin food. Used to hang out in little havana for lunch during the week when I was "Young", Such good stuff! So many cultures from Lain America have come together that it is amazing. Steven
