Filet Knife in Talonite...

Can it be done? Is there enough flex to the blade to follow the bones? Will talonite's type of "sharpness" cut fish well? Can it be ground thin enough? Anyone know of any makers who offer them.....

Although I have NEVER actually made a fillet knife out of Talonite or ANY other material.... I feel that it should be flexible enough. Salt water fish are my favorite knife test medium. Talonite GLIDES right through it, small bones and all.

Your comments are food for thought...

What I really want is a super sharp, easy to resharpen (relatively) fillet knife for larger fish. The edge will be used mostly for flesh, but each striped bass has several small bones (maybe 8 per side, less than a 1/16") that run into the fillet that need to be hacked through, so we can't have a wimpy edge. Some flexibility is very important (I think?). And it should have a non- slip handle, with or with out lots of holes....
