I have always had great luck with Fiskars brand. They commonly make scissors and stuff...I think they are owned by Gerber now or they own Gerber?????

Their cheap at any wal-mart and last forever.
 
I have found the best fillet knives to be the ones they make for the fish markets eg F-Dick make a 6,7&8" model.
 
The best fillet knife I have ever used is a relatively inexpensive Western brand model 766. The shape is perfect, there is just the right amount of flex in the blade, and it came with a leather sheath. Works equally great in the field and in the kitchen. Don't think they are made any more but you could probably find one on ebay or elsewhere used.

If you ever find one, grab it (as long as it is not very expensive).

Imho Russ Kommer's Big Eddy series by CRKT...3008 6 3/4" and the big 3010 9"...are the best fillet knife for the money.
Hollow and taper ground AUS6 steel knife with a real "grippy" Kraton grip handle makes one great fillet knife.........
I also like the triple point serrations on the knife for cutting thru bone and gristle. ;)

I used the white handle Russel knives the last two years I worked on a charter boat, and they performed very well. Once you put an edge on them, they held it through a lot of use, and they never ever rusted on me. Not bad for $8.00.

I've also enjoyed using the Large Cold Steel filet knife, but they require a lot more care since they are carbon steel.
