what would be a good steel for a high quality fillet knife.420v , talonite what?
 
i would think 420v would be to brittle, you can double check with someone though. i'd say ats-34, it has a moderate price too. i'd think the talonite would have the edge roll over to quick, i've heard it rolls over quick on thin knives.
