Fillet Knife

I wondering if anyone could recommend a good, durable, not too expensive fillet knife? I just got through cleaning a "mess" of fish on a FL trip and became very unhappy with the stainless fillet knives available. I'm looking at the Marttiini knives and the Frost carbon steel (Swedish I believe) knives right now but I'm open to suggestions. I'm looking for a shorter (sturdier) knife for filleting and a longer (tradtional) fillet knife for removing the skin. I'm looking for knives that hold an edge & are fairly easy to sharpen and have always had good luck with carbon steel knives in that respect although I've never used carbon steel for cleaning fish.

Thanks.

I have one of Cold Steel's fillet knives and like it a lot. I think I paid around $20.00 for it, I like the handle on it, and carbon steel.

Ditto the cold steel filet knife. Carbon steel but I have fileted up to 25 3-4 lb trout at a time and not had to sharpen ( it was at a fish farm ) Just be sure to dry the sucker off after washing it.

Thanks for the Cold Steel info, looks like it will do the trick.
The Microtech looks like a great knife, but more than I want to pay for a "traveler".

I believe CRKT has fillet knives, they're called Big Eddy, or something to that effect. Might be worth a look. Knives of Alaska has fillets too, www.knifecenter.com carries them. Good luck.

You may want to check out the Russel International line. I think they have knives from 6" on up to 9". They hold an edge reasonably well, and clean up rather easily. Best of all, you can find them for less than $10 in most places. I have to second the Cold Steel filet knife, I used one for a couple of summers. It was nothing for me to filet 30 or 40 croaker before I needed to sharpen it again. But, like bansidthe said, be sure you dry it off afterward, because that sucker will rust if you look at it wrong.

Frost's fillet knives in 12C27 stainless (I believe that's what they use) are very popular along the west coast and stand up well in salt water.

Thanks for the feedback folks, I ended up buying the Cold Steel fillet knife. Funny, between the time I posted originally, and got ready to buy, SMKW had dropped quite a few of the Frost Mora fishing knives from their web site. They used to carry quite a few of the Frost Mora fishing knives, including carbon steel ones.
