Is there a good production or a reasonable priced custom fillet knife made of a good steel like 440c or better steel. What I usually see are either 440a or 420J.A knife made of cpm3v would I believe make a great fillet knife.Any thoughts or suggestions are appreciated.

I have 3 for sale made from industrial hacksaw blades. 7-9 in blades, each varies in flex, and takes and holds a great edge. $55.00 shipped.
Thanks,
Chuck

Melvin Dunn makes a dandy fillet knife in 3 sizes out of 440V for very reasonable prices IMHO. ($120 range from memory).

Melvin has been using 440V for a number of years and has the heat treat down pat.

I need my fillet's to tolerate salt water fishies, so anything carbon steel is a bad idea for me, so that says 3V is out. YMMV.

I like these Browning 906 (and the 909) pretty well also for cheapies. I own one myself. Comfortable handle, lightweight, blade flex is about right (maybe a bit too flexy, fine though).

Steel is fine at 440C (there are a lot of 440 blades out there on junk and just-past-junk knives ... 420 too...unspecified exactly what they are, but 440C is debateably the way to go with higher carbon and better theoretical heat treat capability).

They are serrated, which is a mixed bag... great for big tough gnarly salt water fish, in the way for easy-to-clean fish. Cheap enough you won't cry if you drop it into the drink somewhere. These links will probably work within a few weeks of this post and not after:

Spyderco makes a nice folding fillet knife in Aus-8. Also, Cold Steel's Bird and Trout, done in CarbonV is excellent.

I offer two sizes of 440-C, S.S. fillet knives. One has a fairly stiff 7" blade, for large game fish. The other is very flexable, 5 1/2" blade for smaller fillets from Bass, Catfish, or Northern. You might find the reports on these knives in the "Field Tester's" section of my Web-site, worth reading.
