I am trying to get a final edge on my knives. I can do this easily on my grinder but it isn’t always uniform. Most knives especially commercial knives have a perfectly uniform final grind on the edge. After putting the effort into a blade I want the finish edge perfect. Is there a jig or blade sharpener that will handle thicker blade stock and diamond cross sections like a Fairbairin Sykes or do I have to stop drinking coffee?
 
I'm not a maker, but in YT videos I've regularly seen makers use a jig, whether home-made or bought from a supply house I don't know.

You may get better answers in the makers subforum, where this will probably get moved to anyway.
