Sorry, I was kind of non-specific on that post. I like satin finishes too, but I was wondering the preferred method.
One way that seems to work well is putting a mirror finish on it and then rubbing it with a cutting fluid and super-fine scotchbrite.
Another method that I really like is to take it up to 1200, but after you're there, go back over it by putting a narrow strip of 1200 under your thumb, and then pulling it out and across the stainless with your other hand. This leaves a very clean, very smooth satin finish.
