I certainly hope that is tough meat, otherwise, this seems like cruelty. (May be even if it is tough meat!)
 
I've been watching a few straight hours of Shark Week so all I'm that thing looks like a Great White tearing into a seal at this point....but a beautiful piece nonetheless. ;)

After washing it off, any spotting or anything??

Any plans to take it to some wood, cinder block, etc.?

Start with that cutting board.... Let's see some splinters!

The temptation was there, believe me! But that cutting board has sentimental value.

Gonna have to wait till the temps in AZ get a little lower and go out and start trimming Palo Verdes for the heavy chopping.

This was the slicing test, chopping comes later ;)

Figured a Beef sharpened knife deserved a beef sharp test.

No spots, but as with the high-carbon kitchen stuff, i always rinse, whip, and give a little spray of food-grade lube (in this case, canola flavored) ;)

Once the weather gets a little cooler her in AZ, i plan to do some yard work. Around here, that means cutting paths through desert ironwood and mesquite, trimming Palo Verdes, getting rid of desert brooms, etc. I should get some good pics then. Just too hot to do more than i have to outside right now, and the current priorities aren't having fun with a Busse.
