This is the knife that'll end up going with me on my kit, figured I'd give polishing the edge a try!

I wouldn't call it an "attempt". That implies it's not quite there.

Should read, first polished edge.

Looks really good. What sharpening system did you use?

Thanks guys! That SOB got crazy, hair popping sharp, but I think I need to start experimenting with a strop for the edge.

I used an edgepro Apex- started out with a very wet 120 grit stone and a lot of sharpie at the 20 degree setting until the sharpie showed that the bevel was even along the grind, and then did another pass or three, keeping the stone wet and free of debris. Went up the stones using about 10 passes on each side, 2x per stone. When I got to the polishing tapes (2000 and 3000 grit), I wet the tapes down, did a pass, wiped everything off and went again - about 5 passes on either side. I'll take some pictures with my next victim! I don't guess this was too terrible for a novice.

Looks great!

Why I'm looking at wicked edge pro, it's a pain to sharpen and polish a 33 oz knife on a wet stone.

I've always wanted to ask but felt stupid..... Does the mirror edge make it last longer? or just for looks?

I'll let someone with more insight and experience answer the question, but the difference in simple slicing and push cutting with the extra polishing and finer grit tapes are pretty significant. No word on the longevity of the edge.... Yet. From me at least.
