First knife, some questions.

After seeing all the lovely knifes floating about I decided to have a go myself. I decided on a full tang knife and the scales arrived today (stabilized black ash burl). I just wanted to see what it would look like finished. After sanding to 2000 grit and applying some danish oil (the only thing I had lying about) I noticed a few tiny holes. What is the best ways to fill these in once the knife is finished? How high grit should I sand it to before applying a finish? What is the best finish to use? Does anyone have any tips for drilling the scales for corby bolts? I saw a guide suggesting drilling one scale first then using it as guide to drill through both scales but that wouldn't work since the corbys need a step, am I correct? That's all the questions for now but I'm sure there will be more once all the bits get here and I start working on it.
