There are three fillet/boning knives- bandsaw steel, 52100 santoku, 1080 hunter. All heat treated by me in my salt pot. The bandsaw steel is very tough! and the handles on the other two keep me from wanting to sell them. They are some of the most beautiful wood I have used. Amboyna burl- stabilized on chef and the Lace Sheoak on the hunter- also stabilized. The fillets all have stabilized mesquite. Sorry for the bad pics but I just got them back after the show yesterday and had to take pics for a potential customer. Dan
