To day's She Who Must Be Obeyed's birthday. Since I want to live - I'm not gonna say just which one. Got her a Shun DM0718. Very nice knife - am a little disapointed that there aren't any bits I can knock off of it to "improve" it. Maybe that's why it's a classic? Now if I can just convince her to not stab frozen meat with it - she should get years of use and enjoyment out of it.
Was interesting when the nice salesman at Crate and Barrel started to pitch Kershaw's great CS . Stoped him - told him "this is Kershaw - they aren't just great - they are insanely over the top when it comes to service !"

SWMBO is very lucky! They are nice knives. Good gift (even if it might have been suggested)! And you're right...there's nothing to open up and tinker with! :(

I gave my son my Classic Onion Santoku when he graduated culinary school. The crap they sold him in the supply package was just that: crap. He loves it and gets much more use outta it than I will, and I thought he deserved it. Says everyone else is jealous! Wonder why? :D

I miss that knife...
