First strip, questions

I Just got my bk7, used it over the weekend, and realized id rather have it stripped. at autozone, they have an aircraft stripper, works in 10 min apparently. would this work or be too harsh? and after that i plan on using bulk fuel/oil/water gasket to cut out and gasket the handles, so i dont have to worry as much about rust under them. its a dark grey color, so i think itll look good too. after i strip it, and wash it, thats it? im done? id like to maybe make it look smooth and shiny too.
 
It will work. Look at the thread I started today for a link on how to keep the coating under the scales and protect them. For a little extra bit of work you never have to worry about the handles but can have a nicely coated blade. Best of both worlds.
