Fish and folding knives

Picked off a nice rooster fish this morning off the kayak. We don't eat them that often so I usually give them away to some of the local guys. This time though I wanted to keep a big filet to make some soup with. On the way home I met one of my buddies on his bike and i threw the rooster on the tail gate of my truck and sliced off a big filet for me with my pacific salt and sent him way with the rest. I would usually do the job with a proper filet knife, but I don't normally walk around with a filet knife on me. I DO walk around with a pacific sat on me and there is very little that it's not capable of! Just a spectacular knife! One of my favorites. I like it a little more every time I use it!

Cool pics, as usual! I've never had Rooster Fish, are they strongly flavored or bony?
 
Meh, certainly nothing special, but they taste fine. The meat is a little dark and the texture is a little "jack-like" but they work good in a soup.
 
Ah, I see. Good to know! If I made fish soup, I'd be the only one eating it! My wife and girls would certainly turn up their noses!
 
I know nothing about kayaking, are those pedals just a foot rest or do they "do" something more?

That's a nice lookin fish!
