I don't know anything about knife design as it relates to strength or for anything else for that matter. Obviously blade thickness and the type of steel and tempering all have an influence on blade toughness and strength. How much does the depth of the blade contribute to strength?

Depending on the angle of the grind (how acute/obtuse) it would affect the lateral stress the edge can take (thicker generally is stronger) - but of course this would be somewhat affected by the composition and microscopic structure of the steel itself.

Mostly though, the depth of the blade (or width) relates to the cutting tasks it would best be suited for (including blade shape, etc).
