A friend of mine that use to work at a packing house showed me how he uses a 250 grit flap sander wheel to sharpen knives. He then used a good quality butchers steel after the wheel. WOW!! Shave your face with it. He put chucks on a benchtop grinder. That way he could change flap wheels out quick. :thumbup:
