As the pic above shows, given equal thickness of the blade, hollow ground blade has less metal behind the edge, ergo better cutting abilities, but less toughness and vice versa for flat ground blades.
In a nutshell I generally find that a flat is better for harsh utility cutting and cutting objects that take a true toll on an edge...I also personally prefer it for woodworking. A hollow grind is a better initial slicer although it does sacrifice some edge strength.
