Flattened my EdgePro tape blank with a coarse grit diamond plate the other day and finally got around to using it.
With the flatter yet rougher surface, the polishing tapes make better contact with the edges they sharpen and applying and changing polishing tapes is faster and easier. The coarse surface allows air pockets a place to escape and less surface area for the adhesive to contact, so it's easier to reposition the tapes (or change them) if need be.
