Folder for food processing

I have to admit, my most use cases (for my folders) are kitchen work.

Spyderco Military is an excellent kitchen worker, especially for meat processing. I own it for two years now, and I couldn't sharpen my knives quite as sharp as factories do it, so yesterday it was time to test my Socom Delta. My mother loved that one, because of the sharpness and because it was close in blade shape to the Military.

Mini Grip (w/ whole) is a nice player as well. I even enjoy my super tactical mini-CQC-7: maybe its chisel is on the wrong side but it is very comfy for peeling apples.

Of course, here comes my disclaimer, believing that CQC7 or Socom is the best tool for food processing is a kind of wishful thinking on my side.

I think it might be fit for kitchen work.

Actually, I was considering a new folder, specifically convenient for kitchen. As an example, was looking at Benchmade Onslaught series.

So, do you see any other folder fit for slicing and chopping up vegetables?
 
I actually use my RAT 1 in the kitchen. It comes nice and sharp and it's cheap. Being it is AUS-8, it is stainless and is pretty easy to keep sharp.
 
I've used my Benchmade Mini DejaVoo the other day and it performed well. The other folders that work well are the AL Mar Ultralight series, they are thin, flat ground and have a great cutting geometry.

Large sebenza insingo is my current favourite. Of course it's just a novelty, as the blade stock on pretty much any modern folder is way too thick to beat an actual made-for-purpose kitchen knife.

Last summer at my friend's cabin in Maine, my Tenacious performed quite well in the kitchen. Its FFG blade and tall blade make the 3mm blade stock seem thinner, and offer great food prep performance. It is only a 3.4" blade, so I bought a Resilience (4.25" blade). The Resilience isn't really EDC-able, but it'll work pretty great as a portable kitchen knife.
 
The only food I cut on occasion with my pocket knife is fruit. Everything else is cut with stainless kitchen knives.
 
What is it with you guys? You remind me of a bunch of old ladies using paring knives to prep everything. I like cutting stuff with my EDCs too, but leave it out of the kitchen. Stop spending money on folders for once and pick up a nice 8" chef or something. You'll appreciate it, and you'll save some time, to go cut some cardboard with your folder;) lol.

Love those chef knives and you get what you pay for. My kitchen knives were dull as a butter knife but every once in a while we have a knife sharpening truck that comes around and rings his bells. This guy is awesome with the stone and buff wheels on board and is a sharpening machine gone mobile. :thumbup:
 
Nope, I spent quite a bit of money for nice kitchen knives, so I'd rather use them. Much better suited for that type of work, too.
Better blade shape, larger size and much easier to clean.

I only use my EDC for kitchen duty when I'm on holiday/camping or visit friends that don't have sharp knives. And I EDC mostly small fixed blades.
 
My whole thing with using folders for food prep is one of contamination. Not only the food but the knife. My folders usually have some type of oil at the pivot and it transfers to the blade and then you risk getting food gunk in the pivot as well. I would rather just have dedicated kitchen knives. Sure if im camping or what not I will bend or break the rule. But I just see no real advantage of a folder in the kitchen aside from crocodile dundee showmanship.
 
I use kitchen knives in the kitchen but I don't think you'll do much better than the Spyderco Military if a folder is what you're after.
