Maxamet is going to be super brittle. At least in my experience it was

I didn't want to limit, I'm open to all suggestions

I'm looking for something with extreme high hardness that's not super brittle
There's no such animal. Brittleness and hardness go hand in hand.

I have a Maxamet knife and I haven't had any chipping problems, but the only cutting I've done with it so far has been tape and cardboard. Any kind of scraping motion on the edge and you might get chipping. If you just do straight cutting and don't hit anything hard, you'll be OK.

Most knife sellers have steel comparison information.
Other information available online.
Find a steel alloy balance you like then look for a knife in that steel.
My experience has been the harder the steel more chance of chipping & tip breakage and more of a corrosion issue.
To be a dead horse quality of steel and heat treatment. Bring out the best in any steel.

I’ve had good luck with a Spyderco Stretch 2 in ZDP-189. Mine has shown to corrode fairly quickly, but polishes up easy enough.

I don’t have enough time with S110v yet to be fully confident on how it performs, but it seems a bit more ready to chip than ZDP.

ZDP-189 is also another steel that stays sharp and keeps cutting for a long time.

The ZDP-189 is going to take longer to sharpen than the Rex45 though. Rex45 is a breeze and a pleasure to bring back to sharp ad the Rex45 is going to be a little tougher, hold it's sharpness and not micro chip like I've experienced in the ZDP steel.

Man you got me wanting to grab another Spyderco with Rex45! It sounds like a steel I’d really enjoy as well.

Christmas list completed!
