I would like to get your imput on a good folder. No more then 3" long, lock blade, will be used for gutting fish and deer.....a good slicer. Oh and no more then $100 to $150. Any imput be appreciated.
 
Although I don't own one, I'm sure there will be plenty of members here who recommend the Buck 110. It has a solid reputation.

To answer the OP: I second the Fallkniven U2. I use a Falkniven DC3 sharpener (ceramic/diamond). If you don't let it get too dull, it's not that hard to sharpen.

The Buck 112 and Spyderco Paramilitary come to mind. Both have blades right around 3" and both lock. The Para is open construction instead of a lockback, so it might be easier to keep clean if you're doing dirty chores.
 
Cant go wrong with the spyderco paramilitary. I think the d2 green version is around 110 bucks. Great knife. I edc it quite a bit even though im more a fan of 4 inch blades
 
What about a Buck Alpha Dorado? I've seen such knives at a local outdoor shop. According to the info, their blade is 6.4 cm and they cost 80 EUR, which is about 118 USD.

Since you mentioned fish, how about the Spydeco Salt I? 3 inch blade, H-1 steel will not rust.

Spyderco Caly 3 - VG-10 blade, G10 handles. You can even find the Carbon Fiber/ZDP-189 version for around 150 bucks.

Spydero Delica, benchmade mini griptillian, spyderco salt 1, are some good options. If you can deal with the blade being slightly over 3", the paramilitary would be great. Also check out G10 Delica, it has a flat grind instead of sabre ground frn versions.

Another vote for the Fallkniven U2. Or if you can push your budget a bit, a Fallkniven FH9. (I've seen them advertised as low as $165)

The SGPS steel used in these knives is very abrasion resistant which allows them to hold an edge very well. The abrasion resistance means they will take a little longer to sharpen, but not really any more difficult.
