Edit: Brutus beat me to it.

Only folding kitchen knife I know is the Ryback Folding Kitchen knife made by someone called Kevin Wilkins. Bit pricey but I think his work is well made. Search the internet (google) for Kevin-Wilkins and Ryback Kitchen Knife. The lowest price I saw is a used one going for around 150USD in a forum somewhere.

Good luck. I too would like one so will be glad to hear any recommendations.

PS: Search 'folding-ULU' in Ebay and you'll see the one by Blade-tech. Very nice and might be ok for use in the kitchen.

i like the ag russel hocho...like stated above...or an opinel (not really suited for a present...but i think the #12 makes an excellent knife for cooking)

I don't understand why you want a folding kitchen knife.

Well, Kevin Wilkins make the Ryback which IS a folding kitchen knife. Kevin makes AMAZING knives!!

My mom wanted a folding knife she can keep in her backpack (purse) to cut fruit and whatnot. I got her this one. It's a fillet blade, so it's a bit flexible, but it's sturdier than the flimsy-ass knives that are in her kitchen drawer.

I don't know what kind of kitchen knife you were thinking of, but this is one option that might fit your mom's intended uses. My mom likes hers. The blade is locked closed (so it won't somehow be opened accidentally when rummaging around in her backpack), it's long enough to slice grapefruits, and it's light and thin.

Not exactly a folding kitchen knife that has a dropped blade that allows cutting board chopping but how about the Shun Higo Nokami Personal Folding Stainless-Steel Steak Knife:

The Titan folding knives (camping and hiking) looks like a good folding kitchen type knife, available at the Japan Woodworking site:

It would be nice if there was a deba hocho style folding kitchen knife:)

I keep a spyderco pacific salt in my lunch box. It's like a little folding santuka. And it's yellow which doesn't seem to scare the sheeple. I actually tell people it's a folding santuka, it seems to calm them.

I use the AG Russell, don't think there is a better folding kitchen knife. I use mine almost daily.

I have a similar thread going and i reasearched the ag hocho and some peole said its not very comfortable and not so easy to clean.....

Ditto Larrin. Why? Why be bothered with a folder when a fixed blade in the kitchen can be cleaned up in a jiffy and stuck in a block or a drawer? If you mean a knife that can be used in the office or carried in the pocket/backback/briefcase for food prep tasks such as peeling and slicing, then there are good recommendations above. I would add to those the Joyce Chen Knife, not a folder but an inexpensive honey of a knife that comes with a plastic scabbard. Perfect for office, etc.

we travel alot and carrying a full size kitchen knife in a checked suitcase still tends to raise some eyebrows my mom is very picky about her kitchen utilities and always complains about poor made cutlery so i thought id get her something portable

Personally I wouldn't recommend a folding knife for regular kitchen duty. Too many places for bacteria to hide and grow. Too difficult to clean properly for kitchen use.

+1 on the Opinel. I carry one in a pouch on my backpack that I use exclusively for food. Does a great job!

Here's another vote for the Honcho. Got it for my wife as she travels, used here at home as much as on the road - a great knife. Also got her the A.G.Russell Woodswalker which pretty much covers all bases between the two.
