So I'm wondering why? The skill is undeniable, the end product looks great, but would he have not been better served by just making a knife out of a billet of known quality steel?

My guess is that the piece made will end up being bought as a piece of art.

Something made from quality steel would be better served as a user. Sadly the piece of art will probably sell for more.
