A search for "grafting knife" will get you some low-cost options. Some of them are quite handsome, and the nature of their work should mean thin blades that cut with little effort.
How about a straight up utility knife? There are some very nice vintage examples from places like Stanley, over at the auction site. Just be careful, because some of them don't allow the blade to retract.
Another favorite of mine is the "mill knife", also called a "hacking knife", or sometimes a "window knife". Tough, ugly things that you won't be afraid to beat on, because that's what they were made to do.
Did somebody mention Mora? Somebody should have said something about Mora. Tramontina, too. They make some inexpensive cutlery.
