Here's a green linen BAD making its first cut into a thick T-Bone. They must have hand-fed this steer only the finest corn feed from birth, because the steak absolutely melted in my mouth.

I covertly gnawed on it best I could. I get "that look" from my wife when I start chewing on the steak bone. :p
 
I wish we could get steak like that down here!! There are only a handful of restaurants in Lima (a city of 8 million) who import beef from the USA, Brasil, and Argentina, but you really pay for it, and there is even one place where I heard the owner raises his own cattle so he can get the desired quality. Most of the beef here is old dairy cattle that is slaughtered once the milk dries up, and those poor suckers spent their entire life on the side of a mountain so there is not an ounce of fat on them. The beef is too lean and tough to even make decent hamburgers. I mostly eat fish and chicken as a result, and just dream of getting home to my Weber and a big juicy butcher shop T-bone or NY striploin.... only five weeks to go... thanks Jason for the indelible images... oh and nice BAD, I love that green linen

I understand! I have to go out to my shop to finish my steak sometimes, and to finish off any chicken skin my wife has tried to hide from me after baking her famous chicken breast.:eek::foot:

I refuse to eat beef or chicken from any of the chain grocery stores around these parts. The meat just doesn't keep at all and almost never has the flavor it should. There is, however, a mom and pop grocery store nearby that has its own in-house butcher, and I've found the meat there (beef in particular) is as good or better than the more expensive butcher in my neighborhood. The last NY strips and T-bones I got there were excellent.

I may go down there for the bike show later this month. Friends will be down there signing the book and they'll be in DC the few days before. It is in its second printing already in just one month :cool: :thumbup:(mostly because I bought a copy for every room in Skunk's house)

Honestly, the NY strips did get a little more done than I like, but I thought the T-bone was perfect.

Actually the publisher had only 17 left as of last week so maybe I can mark up the signed ones I have and put them on the exchange:thumbup:

I have to go to three more book signings today. Maybe I should get Eric to hold a Busse and take a pic. I bet that would be the most gold medals to have ever held a busse ;) :thumbup:

He does enjoy camping and the outdoors with his wife & kids.

The biggest thing I miss about S.Fl is the Latino butcher shops. You just ask for Churrasco and get the best steak in the world for usually under $4/lb. It's known here as skirt steak, flatiron steak and a couple of other silly names I can't recall. Very well marbled and most excellent done with a slow smoke.

Up here, everything is 'Angus Beef' and they are really proud of it. Usually over $7/lb and so lean there is no taste.:barf:

Give me that fat for the taste! Lipitor will take care of it later.:D:D
