Here is my latest 8" French style chef knife.
It features a ladder pattern damascus blade, with integral rose damascus bolsters.
The handle is of gorgeous old stock Cocobolo wood.
Zero-edge before sharpening, and thin with a tall heel, 7-3/4oz. total weight.
It features a subtle flat/center-line grind with slight convexity in the lower third, to promote food release.

This knife started at a low price of $800... Now $500 + shipping takes it. Gotta pay the tax man.
