Recommendation? Forge vent hood and exhaust

I'm setting up in a new place that is indoors with 2 windows,
I'm envisioning my forge, anvil and quench area will have a restaurant style kitchen vent hood mounted and exhaust fans hooked up to exhaust the fumes.

Does anyone have any setup like this and any advice?

Just make sure you allow for as much air to come in as you pull out, and additionally where it flows from and what it flows across. For example, I wouldn't put a 1000 CFM hood on one end of your shop and then have the fresh air source on the other end where all of your grinders are with your mill and other precision tooling in the middle between them.
 
Also, don't put a standard exhust fan in or at the end of the vent colum. Hot gasses will make short work of the motor. Theer are special hot flue fans for this that mount in an elbow amd the fan is in the colum, while the motor is outside.

One good way to get a strong draft up the hood/vent is to push ait into the shop. Have a fan or two that draws air in a couple vents and this will push the fumes and heat out the flue and up the vent pipe. You can use standard tri-wall stove pipe to take the vent right out the roof. This setup is called positive pressure air flow, and is far better than drawing air out through the vent, which often creates negative pressure.
