forschner, dexter history and discontinued knives

Hi all, I'm new to the forum here

One burning question i've had for awhile is if there is any archive of forschner/victorinox and dexter-russell knives that have been discontinued and the history of different models. I'm a butcher and have several older knives handed down to me or that i've bought off of ebay or amazon which I can no longer find anywhere. If anyone here works with a knife on a daily basis then you know how your hand can become accustomed to a specific knife. Just wondering about any info
