French regional knives in 12c27 heat treat???

Does anyone have experience with traditional French folding knives ,most of them are made in 12c27 Sandvik or c75 carbon.How is the heat treat on these ones,are they left softer around 55rc or are taken to 58-9 rc or more?I know that probably different companies do it differently,but am not sure as my experience with those is very limited basically non existent.All input is welcome!
 
There's a noticeable difference in edge retention in comparing Opinel's stainless (12c27Mod) vs their XC90 'carbone' blades. So far as I know, Opinel doesn't publish Rockwell hardness numbers for either of them. But many have noticed, including myself, the 12c27Mod Opinels seem to hold up better than their carbon counterpart.

Sandvik specs indicate 12c27Mod can be hardened up to HRC ~59 or so. I tend to think Opinel probably tried to take advantage of that, or get it close to that ballpark anyway. Their 'carbone' blades are pretty softish by comparison, and are more vulnerable to rolling or denting from light impacts if the edge is ground very thin. I noticed this difference after thinning each of mine to similar geometry (a little below ~ 25° inclusive on each), one in stainless and the other in the XC90 steel.
 
I know about opinel,but other traditional makers,they do not state anywhere at how manu rc the blades are tempered to.Was wondering if theyre softer around 55 or so...both carbon and 12c27.I love Opinels 12c27,their carbon is too soft for my taste,and loses that toothy bite pretty fast,but their stainless is way better in any way and doesnt rust.
 
That's nice 61rc for 12c27,I do not know how much this gentleman is charging,I'm not looking to spend too much,thx for reply.
 
Prices are decent too,and knives beautiful,seems like excellent quality,but they're mostly Laguiole style of knives.Will get one of these ones in future for sure.61rc for sandvik should have excellent edge holding ,way better than most production knives.Have Manly folder in 12c27 at 61rc,amazing performance.
