Well, I have the books, and the tools (I think). I just cannot figure out how to get a decent bevel down to the cutting edgfe on any of my knives. What is a good technique to use, however slow and painful. I'm sure it will be better than ruining another otherwise nice knife.

If you have time and patience, one of the best ways to get a sharp bevel edge on a knife is by draw filing. Kills my shoulders tho.
 
I would suggest you get blue layout fluid. This may sound simple but spray your knife blue. When you grind or file you can see where your removing metal. Go slow and wrk from edge back....thats what I do.
