Full convex zero grind possible/desirable on an AMS?

As much as I've been loving my custom AMS, especially the feel of the shaped scales/solid screws in the handle, the coating and grind are annoying me when what I'm comparing the AMS to is my custom NMSFNO with a satin finish and full convex zero edge. I can't help but think the AMS would be a much better little slicer with the same finish and grind.

Anyone ever try this? Is it something the custom shop would even do given the thinness of the AMS blade blank?
 
Looking at the AMS LEs on the Busse site now, they're listed as and look to me like full flat grinds. I guess I'll just drop the CS a line with what I'm thinking of and see what they say.
 
Strip the blade and convex it yourself with some sandpaper , I have done this to a bunch of knives .

Somewhere out there is someone who'd prefer the unique AMS I have the way it is now, and I'd rather have an excuse to order a new one :) Plus, I worry that convexing the existing FFG would result in a very thin profile.
