Yes, as I understand that's the definition of a full flat??

Well, i do thing if there’s no secondary bevel, it would be too thick behind the edge and somewhat unpractical to sharpen. To my knowledge, i have never seen any, apart from some huge industrial shear blade i used to grind at my work. Convex grind would be much closer to what you’re looking

Makers usually refer to a FFG with respect to the primary bevel and will still call it that with a secondary bevel in place.
It sounds like you want a "zero grind" (no secondary bevel) in addition to FFG. This is common on things like kiridashi and other chisel grinds, but those won't always be FFG.
Japanese tantos will usually be a zero grind, but convex, not FFG.

Edit to add: FFG with zero grind is not practical since when you need to sharpen, you either do the entire bevel or introduce a secondary...

“Full flat” refers to the blade grind. Same as “saber” and “hollow” do. It’s pretty damn rare to see a knife with no discernible edge grind, which seems to be your sticking point. That’s referred to as a “zero grind” but it’s only referring to the edge usually.

True convex grinds are supposed to be convex all the way from edge to spine and the edge bevel made as part of the grind for easy maintenance - stropping.
