1. I searched around but these two terms seemed to have the same definition, but their listing on Alpha Knife Supply is confusing me. What's the difference between G10 Scales and G10 Sheets? Which is preferred for handles?

2. I was thinking .250 thickness(ish). What thickness of G10 handle material do you prefer or is most common?

Thanks.

[EDIT] the metal is 0.187 (about 3/16") thick for the knife I will be working on.

Scales are cut off of sheet, depends on the type of blade as to how thick you will need, if you do a hidden tang then you need thicker scales if full tang then you can do thinner. I find that somewhere near .75 to 1" is best for overall combined thickness. G10 and linen are very similar, canvas and burlap have more grain.

1 - On the website, they are the same. The handle section includes micarta and carbon fibre reinforced, while the G10 section has only G10. If you click on the same product on either section, they will link you to the same page.

2 - I'm not a knife maker, so can't comment much. Though, G10 is pretty strong, I have linerless G10 folders that works well, like the Cold Steel Air Lite, which is known to be one of the strongest linerless for its slim and light package (2.9mm/0.115in scales), blade breaks before the handle breaks. So durability by thickness is not an issue.
In my opinion, focusing on making a comfortable handle is a better thing that you can focus on.
