So I know GEC is the umbrella company for the GEC, Tidioute, and Northfield lines of cutlery. And I know that the GEC line uses stainless. So what are the differences between the Tidioute and Northfield lines?

GEC is the "stainless" line
Northfield is their fancy "carbon" line
Tidioute is their no frills but still high quality "carbon" line
