I have an older Gerber Gator and the blade doesnt open as smoothly as it used to and when I look in it it has lint and stuff on the inside so I'm sure it's wormed its way into the pivot. I don't know how to disassemble it, do I need a special tool? It's fairly dull right now but I'm going to send it out and have it sharpened so I figured it'd be good to do this before it's sharp. Here's a picture of the pivot area.

Also, After I've cleaned it what would be a good lubricant that's food safe? It doesn't get used for food often but it's nice to be able to every now and then.

Mineral oil's a good lube, but beats me on how to take it apart. Try working it under running water with a little soap, that usually works.

The holes are about the same size as a paper clip. You can make tools out of bent paper clips to use on these types of pivots. It worked well for me.
