Gerber Mini Covert F.A.S.T. Modification Suggestions

I have an old gerber Applegate-Fairbairn mini covert F.A.S.T. that I am planning on modifying because its a cheap knife that I don't have much use for anymore.
I'm thinking of turning it into a sort of double edged "dagger" style folding knife. Does anyone have any experience with this type of work? Any suggestions as to the best way to go about this?

Not sure on that specific model how much of that false edge is seated in the scales, but you can grind in a new edge no problem, I do it all the time to the Gerber Applegate folders =) you can do it on a stone if you want!
