I bought a german knife the paper with my knife says german steel high carbon. what kind of steel is it? is It D-2?

Typically it tends to be 1095.

Probably not. D2 is generally classified as a tool steel, and is usually advertised as such.

Yep, in all likelihood it's 1095, which can be an excellent steel (here's hoping the heat treat was done well).
