I'm pretty much have my mind set on getting chosera stones....

maybe somday getting the whole linup.

whats a good start....

800, 3k, 5k?

I bought some stones and quickly found having a lower grit stone is nice. I ended out buying a 220, 600, 1200, 8000.

Chosera's lowest stones is the 400 but cuts faster than the grits suggests.
 
No, but they seem to do a good job. I think if you sharpened Japanese knives they would be a good choice.

It's a great stone, the extra size lets you keep more of the knife in contact with the stone, for better angle control.

after the 1K

I use a Bester 1200

Suehiro rika 5K for Stainless you can stop here

for higher end carbon proceed to

Kitayama 8K

If you want to add a mirror polish, finish with this.

Hands down, this is the finest stone I've ever used! It even has an earthy back to nature smell when wet
 
Ok, so after a bunch of reading, I kinda decided I want to go with all spapton glass stones instead......
I'd like to go up to 8k.....is there a need to buy every one in between?....or can you guys recommend a good progression up to 8k in the glass stone. from setting bevels on up to 8k....Thanks for the help!!

When I bought my shapton glass, I went with 500, 1k,2k,4k,8k,16k,30k. Funny thing is, I rarely go beyond the 1k or 2k unless I'm messing around. The 500 is my workhorse. I love that stone. You can get a shapton glass 500 that is double the thickness of a standard shapton. That's what I have.
 
The only Shapton Glass I have is the 3k but gosh it's useful for stropping strokes to touch up a micro-bevel. Great stones.
