There is no way to control the angle like I need to on the Chef's Choice 120. You stick in in and that's it. Need to work a bit on the tip? You can do it but in the blind. So I am returning it. That will free up about $150 in cash for me.
I will use my Lansky on my best knives but for all the rest I want an electric sharpener.
I also will want to be sharpening about 50 to 100 knives per year for other people. Maybe up to 200 but that's all. These will not be high end knives either. Just $5 to $35 EDC pocket knives, $15 to $40 hunting knives, and $2 to $25 kitchen knives. But I want to put a good sharp edge on them that the customers will be delighted with.
The main reason to sharpen knives for other people is to pay for my own setup and to make a little extra cash.
Spending over $150 goes down really hard at the moment. Is there any good set up in this price range to do what I am talking about?
What about the HF belt sander everyone is talking about, a good set of belts from Lee Valley, a cheap bench grinder, and a set of paper wheels from Steve?
I would grind the edge profile on the belt sander then finish is up with the paper wheel setup.
I am already good with keeping an angle. I have sharpened many, many knives by hand over the years with regular stones and then a 3 stone setup. But I am tired of all the time it takes to sharpen a $5 knife on a stone. I want quick and dirty. Not too dirty, a good sharp edge is required. But neither am I looking to get the kind of edge I can put on with a good set of stones.
