Pawn shops and antique malls will have a bunch of used knives. There's a Bass Pro Shop toward the southern end of Vegas along the 15, too. You can see it off to the western side of the highway.
 
Without question, Advanced Tactical & Blade is the best store in town. Owned by a very nice lady who knows her knives. Also sells flashlights and other tactical gear. The selection is awesome, and her prices are reasonable. I last visited with my wife and son, and we spent about an hour just looking at all the neat stuff in the display cases. Enjoy, and support a good store owned by good people.
