Good Edge Pro Practice Knife?

I have an edge pro I got for my kitchen knives that I have not really worked with to get proficient. My kitchen knives are JA Henkel Pro S series and I have played around the sharpener some with them and have managed to get a decent edge but since I am still learning how to sharpen I don't know how much more of an edge they will take. I plan to buy a nice Japanese knife that will take a much nicer edge but have not found just the right one yet.

I recently purchased a Spyderco Sage 3 with S30V steel which I assume is harder and will take a better edge then the Pro S kitchen knives and before I throw it on the edge pro I would like to get some practice on something a bit cheaper. Does anyone have a recommendation of a small folder that is not as expensive as the Sage but still have good steel that will take a great edge?

Get all of your kitchen knives straight razor sharp and you'll be good to go with just about anything. Also look around Garage sales/flea markets for old beaters like Ka-Bars, Case, Schrade, Buck, Gerber, etc that you can pick for $10 or less. When you can get an old klunker Buck 110 and sharpen it to the point that you can take it into the lavatory and shave with it, you're pretty much there.
