Good Fillet knife?

Hey guys. im in the marker for a good fillet knife. This will be a user.

All the knives im finding are 420HC or 440A. This isn't needed, as i clean my knives, and i stay out of salt water. Simply put i want a fillet knife that has good blade steel. The only knife iv found so far that has good steel is Cold Steels fillet knives, with the Carbon V. i would rather not buy from them if i can help it; Just a personal opinion, not wanting to start a CS debate.

Anyone know of any other companies that use good steel? 1095 or other carbon steel, or VG-10 or similar stainless? What about got under $100?

Any help is greatly appreciated. :)

Check out Bob Dozier. I've never had one of his fillet knives but the others I have from him are outstanding. It won't be under $100 but it will be a great blade. If I'm not mistaken he will use several steels at customer request but usually uses D2.
 
Check out Benchmade's fillet knives, I have never used one, but anything from Benchmade has to be good.
 
Knifemaker Phil Wilson who posts sometimes to these forums specializes in fishing knives and could undoubtedly make you something you'd really like.

Also don't overlook the Swedish Eriksson and Frosts knives:

I haven't used any of Frosts Sandvik 12C27 blades, but Eriksson's 12C27M is excellent, in my experience edge holding compares with VG-10. The Swedish knives are outstanding values.
 
These work for you????? Carbon steel blades, I have the 8" takes a keen edge and holds it.


Fillet Knife - If tired of mangling your potential dinner due to awkward blade sizes, consider the Dexter-Russell Fillet Knives. Longer flexible blades lengths will provide greater ease when filleting large fluke (summer flounder) or skinning fillets.

I bought one of these for a good friend of mine who is areally keen fisherman. I was very impressed, he was ecstatic. George Titchbourne also made a sheath for it which cost a little extra.

Dexter Russell. Look on any commercial fishing boat, and you're bound to find at least one. That's because they're high carbon stainless, and they keep on cutting.

I'd get one with the white plastic handle (Sani-Safe line) instead of the wood. Better guard. More sanitary. Better grip.

Just Google "Dexter Russell Sani-Safe" and you'll get plenty of options.
