Looking ffor a nicee hard steel like a butcheer would use. It is for my dad as a gift. I bought the Chef's Choice, but with the diamonds, it iss really sharpening instead of steeling. Any suggestions what to use? The idea is to usee it in the middle of a hunting trip to keep the balde going and maybe leave the sharpener at home.
