Good knife to practice sharpening on

I'm new so pardon the question: Whats a good knife to practice my sharpening skills on? Has to be cheap in case I decide to reprofile the blade with a file :D ...maybe an Opinel?

A good knife to practice on is carbon steel; it is pretty forgiving.
 
The easiest to practice on is a non-folding knife especially if you use water or oilstones. You don't have to worry about getting swarf into the pivot area. A Mora would make a fine choice. But an Opinel (the standard carbon steel variety) would work very well, too.
 
Another vote for the opinel in carbon. I'm sure there are a few others but an opinel is the cheapest (I can think of) without loss of steel quality. BTW don't buy an overpriced one (unless of course you feel like it) i've seen them being sold for 20 dollars when you can by them for half the price.

Buy an Opinel N° 8 or bigger ! I usually change the profile of the blade and make practice with fileworks on my Opinels
 
better still, an inexpensive, carbon steak knife with a plain edge. Chicago cutlery makes em and their a great practice knife, available at your local Target store.
