Good morning everyone! I thought I'd say hi while my internet is working. :D

Lots of runoff here, the whole mountain is one big stream! Looks like snow weather too...

My camera is completely toast so no pics today. My new one will be in tomorrow though, I can't wait!

I've been working overtime here and had a big day in the shop yesterday! I feel like things are moving fast and are going well now that I have gotten the bugs in my new equipment worked out.

Today I'm going to be working on random knife projects and cooking some pork al pastor! It's been marinating for two night now. :D

Nothing special going on for me, just at work this morning. Mmm, al pastor, I'm too lazy to make it so I just buy it from people who make it better than I could anyways! I'm thinking a good burrito for lunch sounds tasty, lengua with black beans and corn, avocado, rice and cheese. I did pick up some nice looking pablano chilis yesterday for rellenos tonight or tomorrow, though. Good thing is I can get real motzarella cheese here made from water buffalo milk, so much better that way!

I hope you're using shoulder, or at least Boston butt. That's got all that tasty fat to render down into it while it slow-cooks.

Gooeytek, OH YEAHHH!!!!I GOT IT!!! I'm actively fighting off the masses right now with it actually... I have taken over downtown Bayfield and will be moving with my gang westward to Durango next. Yarghhh where's my stovepipe hat! :D


That's what happens when my internet goes down...

The Al Pastor was so good it was unbelievable! I used country style ribs, lol it was super fatty with a mega pork rind of fat on it, lol! I put them on a rack, rendered off the fat then cooked them in the sauce. I just winged it as my net keeps going down, it wasn't traditionally done but it was exceptionally good. I used some local "special blend" chilies, New Mexico is chile central and we have a killer selection here.

I had a great day and was busy in the shop until late, I'm putting in extra time to get Ti Backpakers done.
