I just got a Sukenari Gyuto Made from ZDP-189 Powered metal and is 240mm long, this thing is just beautiful and is razor sharp with a hardness of 67 HRC.
I noticed the edge on this knife wears extremely well and stay's very sharp for a long time,I can not say enough good thing's about this knife and it shows a true Master made this knife judging by the workmanship and the quality.

The second knife is a Fujiwara Santoku 180mm with a Hardness of 64 to 65,this is also a very made knife and you can tell Mr Fujiwara is more concerned making the knife out of a good steel and not spending a lot of time making it look pretty to keep the cost low.My Fujiwara is also holds it's edge well and stays sharp for a very long time and would be a better choice for someone who wants a really well made knife but does not want to break the bank.
